BINISUES · MENORCA
Between Ferreries and Ciutadella, Binisues preserves a way of life connected to the land for generations. The farmhouse, the manor house and the old tools and implements tell the story of how people lived and worked here over the decades.

Soft and supple, with milky aromas, a light buttery note and the gentle tang typical of Mahón-Menorca cheese.

Firm, intense and lingering. As it matures, more complex flavours emerge, along with the characteristic piquant note of longer-aged Mahón-Menorca cheeses.

One of Menorca’s most characteristic cured meats. Lean pork and pork fat, salt and pepper: a simple recipe that has formed part of the island’s larder for generations.

DAYS ON THE FARM
Fel, the farmer at Lloc de Binisues, carries the countryside in his soul; he has lived in the countryside all his life, growing up under his parents' care. From early childhood, his world was filled with the company of animals and, above all, the unhurried gait of the cows that always fascinated him.
His family's legacy was a shining passion and tireless devotion at every moment of the day. Rita, the madona, on the other hand, was born and raised in the village and had never seen a cow up close. But love brought her to Fel twenty-five years ago, and in that moment she knew her life would blossom in these fields. Drawing on treasured memories, old advice and remedies from long ago, they were able to pick up the thread of a tradition that had once seemed lost to time.
Every dawn brings a tender struggle to keep that flame alight. Today, together with their children, Pau, Francesc and Gina, they are the present and future soul of the farm. Their wish is to pass on the ways and customs of their beloved Menorca, so that this sacred family bond will live on for generations to come.
From this bond and this landscape comes the cheese of Lloc de Binisues. Its flavour embraces nostalgia, steeped in the silence and wind of the island's heart. It has an almost poetic creaminess and maturity; a cheese that preserves the authentic taste of their ancestors' memories. It is the fruit of their story of love and life, the reason why, grateful for the past, they keep walking on today…
THE CRAFT
Artisan Mahón-Menorca PDO cheese is made with raw milk from the same farm. This is where the difference begins.
The curd is wrapped in a cotton cloth, the fogasser, pressed and tied with the lligam cord. The folds leave the characteristic mark of artisan cheese on each piece.
After pressing come brining, air-drying and ageing. The pieces are turned and the rind is worked throughout the process until the young, semi-cured or cured cheese develops its character.
The shipping cost is calculated according to the weight of the order and its destination.
Free shipping on orders over €80.00.
